Needed: New Recipes

Do you ever go through a slump where you feel like you are making the same seven things for dinner every week? Not that I cook seven times a week, lordy no! I just feel like I am in a cooking slump. I make tacos, spaghetti, chicken, pork chops, etc... over and over again. Tyler asked me yesterday if we were going to have chicken and broccoli or chicken and corn. WOW! What a variety I provide!
I need some new ideas, and this is where my blog buddies come in. Please share your favorite recipe with me. I will then post my favorites, too.
My family will thank you!

Well, it sounds like you make the same stuff I do. I have actually started to make breakfast for dinner sometimes just because I am tired of thinking of dinners. I do have an enchilada recipe that is only 4 ingredients that is really good. Basically it is 2 cans green enchilada sauce, cheese (I use mozzarella), shredded chicken (I put chicken in a crockpot in the morning and it shreds super easy by dinner), flour tortillas. Basically mix one can sauce, chicken , half cheese, roll in flour tortilla. Lay rolled tortillas in baking dish. Spread other can of sauce over top of rolled tortillas and top with rest of cheese. Bake 400 degrees until heated. Good luck on your recipe finds. I do use a website called allrecipes.com. Nice thing is you can do an ingredient search to look for recipes.

Baked Ziti
1 box penne pasta cooked
1 jar tomato basil spag. sauce
1 small carton of whipping cream
shredded mozzerella cheese.

cook pasta
mix the sauce and the whipping cream. add the cream until the sauce looks like La Madeleines tomato basil soup. put cooked pasta in 13x9 dish, pour the sauce mixture on it. Sprinkle with cheese and cook at 350 for 20 to 30minutes to heat thru.

variations: if you must have meat for all those manly men in your house you can add cooked diced chicken or cooked italian sausage.

serve with garlic bread and caesar salad...

I had this dilemma too... until I started planning out my entire month of meals. It has totally helped me w/ my variety and I am not nearly as stressed thinking "what will I fix for dinner?!!"

I sit down once/month and check out my cookbooks/recipe cards. It also helps me b/c I don't then repeat certain meals over & over again.

Good luck!

Hey check out the "healthy" way Rachael Ray made chili cheese fries on today's show. Looked easy, and I bet the boys would love them, plus healthier than the real ones! Monday's show (5/26)
Love you! Mom
